Meet the Staff
Zoe Luke – Service Manager, PW Pizza
Born in Newcastle, England, home of some pretty good football and beer, Zoe first worked in a restaurant at age 15. As part of a working internship from University of Northumbria she travelled to the USA for the first time at age 20 to work at the Jupiter Island Club, in Florida.
There she met her future husband Ryan who is a chef and originally from Southern Illinois. Soon after marraige, they opened a restaurant named Luke’s Shade Tree Cafe in Pinckneyville, IL. After several years they decided to relocate to St. Louis in April of 2011. Zoe joined PW Pizza as one of the opening team members and quickly moved up the ranks to management where she has been ever since. As far as we were able to confirm, Zoe is the only British born, pizza restaurant manager in the city of St. Louis.

Vin de Set and Eleven Eleven Mississippi represented the Saint Louis Originals in participation of the Saint Louis Blues 14 1920s Speakeasy themed event at the Scottrade center on Wednesday, February 16th. Paul, Wendy, Ivy, Jason and Stacey attended all decked out in their 1920s gear! The event featured Craps, Blackjack and Roulette with Saint Louis Blues players as the dealers, live entertainment provided by the Charles Glenn Group, live and silent auctions, raffle prizes, great food and cocktails. Along with all attendees time, Paul and Wendy donated food for the event and a Chef’s Tasting Dinner at Vin de Set for a party of 10 for the auction. From Vin de Set , Duck Cassoulet and Duck Confit with truffled mashed potatoes were served and from Eleven Eleven, Wild Boar Bolognese with aged goat cheese polenta.
The Saint Louis Blues 14 is the charitable trust of the Saint Louis Blues with a mission to positively impact programs and services that promote health and wellness for the youth in Saint Louis. The trust was created in 1998 to honor former Blues Player Doug Wickenheiser, #14, who passed away after a long battle with cancer in early 1999. The Blues 14 fund focuses on four areas of giving, which include cancer care and awareness, health awareness, education and youth hockey development. Paul, Wendy and her parents unexpectedly visited Schloss Vollrads in May as an optional shore excursion while on a Rhine River Cruise. Once they arrived at the castle and saw the family crest they realized this was the same producer of a wine that they carry in the shop. What a small world it is to travel around the globe and randomly find the producer of a wine selected by our Wine Director here in St. Louis. One really cool tidbit is that in order to avoid cork taint, this wine is sealed with a Vino-Lok glass stopper, the very first winery to do so!
The viticultural history of Schloss Vollrads is inseparably linked with the name Greiffenclau. It is the family with the longest tradition of wine growing - not only in the Rheingau, but probably in the world. A document in the Mainz City Archives shows that on November 18, 1211, Ruthard Embricho and Heinrich Greiffenclau sold wines from their hometown, Winkel, to the St. Victor monastery in Mainz, Germany. Even in the Middle Ages Vollrads wines were a valuable commodity exported to towns along the Lower Rhine and in northern Germany. Then, as now, vines were cultivated on the south facing slopes along the Rhine River that still fan out in a semicircle around the Vollrads Palace. Today, this long tradition is enhanced by the most modern technical equipment and meticulous care in the cellars. The estate’s 125 acres of vineyards are planted exclusively with Riesling grapes, the finest white grape grown in Germany. In order to achieve the highest quality of wine possible, Schloss Vollrads cultivates Riesling grapes; controls yields through selective pruning; practices ecologically-oriented vineyard maintenance; harvests its grapes late and selectively, by hand; and allows its wines to develop with as little interference as possible. The cellar master strives to retain all the grapes’ natural aromas, minerals, and acids during vinification and to produce fruity Riesling wines that reflect their varietal character. Schloss Vollrads devotes special attention to producing dry and off-dry Riesling wines that are excellent with good food. The 1999 vintage was especially remarkable: for the first time in the estate’s long history, every quality level - from Qualitätswein (QbA) to Trockenbeerenauslese (TBA) and Eiswein - has been produced. The Schloss Vollrads team, headed up by Dr. Rowald Hepp, is particularly proud to have received the Award of Honor conferred by the State of Hessen.

Ingredients
¼ lb.fingerlings split
Olive oil
¼ t Alaea Hawaiian Sea Salt
¼ t pepper

Instructions
Toss potato in oil with salt & pepper. Place on sheet tray and roast until cooked.

Ingredients
4-6 each scallops depending on size
1 C spinach raw
4 each fingerling potatoes – split & roasted (keep under heat lamp)
8 each dried strawberries
1 ½ oz. grapefruit vinegar
¼ t Alaea Hawaiian Sea Salt
¼ t pepper

Instructions
Lightly sprinkle scallops w/ salt & pepper and grill. In a salad bowl mix spinach, potatoes and 1 oz. grapefruit vinegar together. Put salad in the middle of the plate. Place scallops and strawberries around salad. Drizzle ½ oz of grapefruit vinegar over scallops.

Ingredients
1 each 5 oz lamb chops
½ C cauliflower puree
2 T grain mustard glaze
4 each grilled scallions
¼ t Kala Namak Black Salt
* Kala Namak Black Salt has sulfur like characteristics that bring balance to the gamey flavor of the lamb chops. This salt is available for purchase at Grand Petite Market and online (link to store product).
Grain Mustard Sauce
1 # brown sugar
1 C grain mustard
1 C water
Place in pot over medium heat until sugar melts. Store in walk-in.
Cauliflower Puree
6 heads cauliflower
2 T saffron
Water to cover
1 # butter
Salt & pepper to taste
Instructions
Clean cauliflower and put in pot. Cover with water. Add saffron and bring to a boil. Boil until cauliflower is cooked. Strain through the small die grater of the robot coupe. Grate cauliflower and butter into fish plastic. Mix with salt & white pepper. Store in walk-in.
Grilled Scallions
Toss scallions in oil, salt & pepper. Grill. Let stand at room temperature.
